The train station was snowy. It was a good winter day.
Step 1: prep station with apples, dough, pie rings, etc.
Step 2: fill pie rings
Step 3: fill with almond cream
After the tarts, I got to help decorate the Gateau Le Bec Fin cakes and the Wendy cakes. Later on, I also got to decorate the Costa Rica cake.
It's clear that I don't quite have the hands for chocolate, at least not yet. It is very breakable and has to be put down just so, and I end up either breaking it or touching the cake with my hand somehow. Hopefully practice makes perfect.
Other highlights of the day:
I made 80 mini tarts for the dessert buffet
I was allowed to plate desserts for lunch! Still a low-level job, but I garnished all of the plates with fruit and chocolate.
I am now scheduled to work Saturdays from 3-10 and have Mondays off. It's an interesting tradeoff, but I don't know how much I'll like it.

ReplyDeleteyour tart is beautiful! they never let me make an entire cake or tart by myself. though I'm starting to think that was just because my boss was a real control freak... my supervisor for my jp was awesome though. she let me do soo much more than i got to do at le bec over the summer. but your hours are crazy! even when i was getting paid i didn't have to work those hours. I always worked the 8-4 shift. that meant that i did get to plate desserts for lunch at brasserie perrier (where i did my jp). that was stressful. being in the kitchen during lunchtime (or dinner i imagine) is so frenetic! the waiters are constantly breathing down your neck and yelling at you to get it done faster. whoo boy. soo not going to work in that kind of kitchen again! but it's kinda funny that they have you working so late! cool and weird... but I am soo jealous about all the stuff they let you do! I wish they'd given me that much freedom.
ReplyDeleteooh ooh! are you keeping your recipe book? they let you write them down right? i got to write them down but then i lost my book in the kitchen somewhere :( oh well.
I really wish i could be in philly for restaurant week. that would be awesome! well here's wishing you come out the other end of restaurant week in one piece!
oh also, do they feed you real food? they never gave me a lunch break when I was there so I'd also sneak downstairs and grab some rolls or something. but somehow I didn't feel really hungry at the end of the day. probably because i nibbled the cake ingredients here and there... and I totally agree about the standing up all day! that was a bit hard to get used to. and my boss didn't like to see us leaning over and resting on the counter tops but we did it anyway when he wasn't looking.
